Summary, etc. Signature Dishes of the Philippines was conceived and written to document my experiences in my almostfive decades of working with food. My focus has always been studying, developing, testing, tasting, refining, cooking and presenting Filipino food in ways that will acceptable to all! Stories and insights shared by friends and patrons, show the positive acceptance, and enjoyment of Filipino food,served in a myriad ways, and venues. Community festivals showcasing various ethnic communities, special educational projects such as those sponsored by the Smithsonian Institute, fund-raising events like the Washington Embassy Row Diplomats for Operation Smile, and others, show how Filipino cuisine can be presented to a wide variety of audiences, and garner rave reviews! Presented in the recipes here, are simple, practical methods that utilize present day gadgets, technologies, and internationally available ingredients. Included with the refined, easy-to-prepare traditional dishes, are exciting new foods spanning the past 30 years. The exposure and experience of serving millions of Filipino dishes through our group of restaurants in Baltimore, Maryland, and receiving high acceptance and approval ratings for clients and food critics, has truly been inspiring and fulfilling. A mission of the Filipinos must be to go and prepare Filipino foods to rest of the world, as best we can! I have also used multimedia to teach others about Filipino cuisine. TV programs, newspaper articles, training videos, and testimonials have helped increase public awareness of simple and exciting tastes and possible combinations of Philippine foods with other world cuisines.
