This book is a result of a project that aims to learn more about the Filipino bread- to define what they are and how they came to be in the hope that these traditions be recorded, preserved and appreciated. It is also a documentation of the stories behind the making of Philippine bread.The book follows the tale the bread from bakery to dining table.It celebrates the tinapay(bread),tinapayan(bakery), and magtitinapay(baker). The readers are lead inside the panaderia or bakeshops from north to south of the Philippines,both traditional and new,tracing how time and the economy have changed how the panadero baked Philippine breads.The book is a tribute to the panaderia as cultural institution. The authors collected pioneering information from written historical records,oral history interviews,and field anthropology visits. --RVP
